Vegan Mac and Cheese Cauliflower Cheese Sauce Main 1

Vegan Mac and Cheese (Cauliflower Cheese Sauce)

Craving mac and cheese but want a healthy alternative? This dish is not only tasty and nutritious, but it’s also vegan. This whole wheat pasta with a cauliflower cheese sauce only has 3 ingredients. It is super easy to make.

Ingredients

Pasta
8 ounces whole wheat elbow macaroni
3 quarts of water
½ tablespoon sea salt
Sauce
1 head cauliflower, chopped
1 cup vegetable broth
Salt and pepper to taste

Directions

Add water to a pot and bring it to a boil.

Add in 1 tablespoon of salt per pound of pasta you are planning to cook. For this recipe, you’ll need about 1/2 tablespoon of salt. Bring the water back to a boil. Only add salt to boiling water. Prolonged contact with salt can cause pitting on stainless steel surfaces, and salt placed in cold water takes longer to dissolve.

Add in 8 ounces of whole wheat elbow macaroni and cook according to package recommendations. While the pasta is cooking, let’s make our sauce.

Add a little bit of olive oil to a pan. (NOTE: Because we are planning to mostly steam the cauliflower, you don’t have to do this step, but you can.)

Add in 1 head of chopped cauliflower. Saute the cauliflower a little bit.

Add in 1 cup of vegetable broth, or until the bottom of the pan is covered by about 1/4 inch.

Bring the broth to a simmer, cover, and steam until the cauliflower is fork tender.

Once cauliflower has cooked, remove it from the pan using a slotted spoon (so excess liquid stays in the pan), and place it in a food processor. Puree until smooth.

Add the puree back into the pan you used to saute the cauliflower.

Once the pasta is done, add it directly to the pan with the cauliflower puree. Do not drain the pasta, simply use a slotted spoon. The starches from the pasta water will help make the sauce creamier.

Mix the pasta and cauliflower puree, over low heat until the pasta is fully covered. If the sauce is too thick, you can add in a little more vegetable broth to thin it out if needed. Salt and pepper to taste.

Plate and serve.

Vegan 4th of July Parfait with Aquafaba Portrait 3

4th of July Berry Parfait (Vegan)

What better way to celebrate Independence Day than with a delicious berry parfait? Nothing says freedom like cruelty-free vegan eats! This 4th of July dessert recipe is made using aquafaba (chickpea brine), blueberries, and raspberries. Plus look how festive it is!

Ingredients

3/4 cup aquafaba (chickpea brine)
1 cup sugar
1 tablespoon vanilla extract
1/4 teaspoon cream of tartar
12 ounces raspberries
1 pint blueberries

Directions

Strain out a 15 oz. can of chickpeas, and you will be left with about 3/4 cup of liquid. This is called aquafaba. Add 1/4 teaspoon of cream of tartar to the liquid. Note: Save those chickpeas to make this delicious beet hummus!

Transfer the liquid to a large mixing bowl or stand mixer, using the whisk attachment.

Add in 1 cup of sugar and 1 tablespoon of vanilla extract. Mix on high until the aquafaba fluffs up. It should hold its shape but not be so stiff it doesn’t give. Why does this work? Aquafaba is rich in protein, much like egg whites. Whisking it causes the proteins to unfurl and introduces air into the mix. The proteins create a structure around these air bubbles, separating them from the liquid. The cream of tartar helps reinforce those protein bonds, resulting in delicious vegan whipped cream.

Layer the whipped cream, blueberries, and raspberries.

Mushroom Sloppy Joes (Vegan)

After making mushroom meat tacos, I said to myself, “self, you should make more mushroom meat meals!” I was just so happy with the texture and how filling it was, that mushroom meat is my new thing.

Ingredients

2 lbs mushrooms
1 red bell pepper
½ red onion
1 ½ cups ketchup
6 cloves garlic
2 tablespoons packed brown sugar
2 teaspoons chili powder
1 teaspoon mustard
½ teaspoon red pepper flakes
2 tablespoons Tobasco sauce
1 teaspoon Worcestershire sauce
2 tablespoons olive oil
8 Kaiser rolls

Directions

Trim mushroom stems and then chop them into a small dice. Yes, this is a total fucking pain. So you may want to double the recipe. But I don’t blame you for cursing my name while doing this.

Dice red onion and red pepper. Mince garlic.

Add 2 tablespoons of olive oil to a large sauté pan and warm it over a medium-high heat. Add in the onion, peppers, and garlic. Cook for a minute, just so that the mixture is aromatic.

Add in chopped mushrooms in batches. You may still be cursing my name. The key here is to not crowd the pan. A crowded pan will cause more liquid to accumulate and make the mushrooms soggy. Once one batch cooks down, keep adding in more.

Cook until the mushrooms are reduced in size by at least a half.

Add in the ketchup, brown sugar, chili powder, mustard, red pepper flakes, hot sauce, and Worcestershire sauce. Stir to combine. If you like your Joes saucy, you may want to adjust this part of the recipe by 25%.

Cook until the mixture is well combined and hot.

Serve on a Kaiser roll. Then motorboat the heck out of these guys, they are hella good!
