Galaxy Frozen Lemonade (Sugar Free CBD Recipe)

Galaxy Frozen Lemonade (Sugar Free CBD Recipe)

How to make a color changing lemonade that turns from deep blue to a bright pink. This CBD lemonade recipe is sugar free so you can chill out and avoid a blood sugar crash.

Ingredients

Color Changing Ice Cubes
4 cups hot water
½ cup butterfly pea tea
¼ cup monk fruit
Lemonade Syrup
1 ½ cups lemon juice
1 cup monk fruit
Galaxy Frozen Lemonade
3 cups crushed ice, divided
1 cup Lemonade Syrup, divided
2 cups crushed Color Changing Ice Cubes, divided
½ cup soda water, divided

Directions

Brew butterfly pea tea per instructions with 4 cups hot water and ½ cup tea leaves. Strain tea.

Dissolve ¼ cup monk fruit sweetener into brewed tea. Let cool and add to ice cube trays. Freeze overnight. The dark blue tea might turn white when frozen, which is totally ok.

Crush the cubes by adding them to a zip top bag and smashing them with a hammer or meat tenderizer. This is very therapeutic.

Dissolve 1 cup monk fruit sweetener into 1 ½ cups lemon juice by adding the sugar and juice together in a microwave safe measuring cup. Microwave at 15 second intervals, stir, and repeat, until fully dissolved and let cool.

Divide 1½ teaspoons of Infuse It water soluble CBD between 2 glass tumblers. I used 12 ounce Collins glasses. Then add 1 ½ cups of crushed ice to each glass. Add ½ cup lemon syrup and then top off with 1 cup crushed Color Changing Ice. Top off with ¼ cup club soda and serve with a straw in each glass.

You can dissolve the Infuse It water soluble CBD into 2 tablespoons of the Lemonade Syrup first. A bit of heat can help this, so you may want to nuke the syrup in the microwave for 5 seconds before mixing. But the specks of the CBD powder floating around, as it dissolves, gives it a galaxy-like look to me. They look like stars!

Of course, you can make this without the CBD too.

The Color Changing Ice mixing with the Lemonade Syrup will turn it from blue to purple and pink. The more you mix it, the brighter it gets. It can be a little sweet if unmixed and becomes more balanced as it mixes and the crushed ice melts.

Enjoy and chill the fuck out with this refreshing CBD frozen lemonade!

Easy Cherry Lemonade

Easy Cherry Lemonade

Refreshing as it is easy to make, this cherry infused lemonade is the perfect beverage for those warmer days and a wonderful way to celebrate fresh cherry season!

Ingredients

1 lb fresh cherries, pitted & smashed
1 cup sugar
1 cup fresh lemon juice
12 cups filtered water
Slices of lemon

Directions

Add 1 pound fresh cherries to a gallon-sized pitcher that are pitted, smashed, and juicy.

Fresh cherries will keep for about 10 days in the refrigerator and up to 6 months in the freezer. You may want to destem and pit them when freezing but not necessary.

Add 1 cup of sugar, 1 cup fresh lemon juice, and 12 cups of filtered water. Filtered is optional but does improve the taste.

To get the most juice out of a lemon, microwave it for about 20 seconds. It will not only be easier to squeeze, it will yield more. Excess juice can be frozen for up to 3 months.

Place the pitcher in the fridge for 2 hours. During this time the sugar will dissolve.

Stir just before serving and serve over ice with slices of lemon. The cherry lemonade will keep for about 10 days in the fridge. If you aren’t going to drink it in time, turn it into popsicles!

Enjoy!

No Recipe Smoothie to Fight Food Waste

No Recipe Smoothie to Fight Food Waste

How to make a healthy smoothie without a recipe and reduce food waste, no matter what fruits and veggies you have on hand.

Ingredients

1 cup veggies
1 cup fruit
1 cup liquid
½ cup proteins, fats & fiber
1 tablespoon of flavor

Directions

This is a great way to use up produce that is still safe to eat but maybe a little bruised or wilted. Place ingredients you plan to use in the freezer the night before. This is an easy way to thicken your smoothie without ice.

Add 1 cup of veggies. Some great veggie options are spinach, kale, collard greens, sprouts, broccoli, cauliflower, and carrots.

Add 1 cup of fruit. Tasty fruit options include bananas, berries, any citrus fruit, apples, or any stone fruit.

We waste over 40% of food that is produced here in the United States, and while there is waste at all levels from farming to the supply chain to restaurants, as a consumer, you can make a huge impact on what is wasted.

Add 1 cup of liquid. For the liquids, you can use water if in a pinch but fruit juices, coconut water, non-dairy beverages such as oat or almond milk are best.

Add ½ cup total of proteins, fats, & fiber. Soft tofu, peanut butter, and avocado are some great fats and proteins. Flax seeds and chia or even oats are perfect for fiber.

Did you know that 1 in 4 bags of groceries is thrown away on average?

Add 1 tablespoon of flavor. Cocoa powder goes great with peanut butter or coconut, ginger with stone fruits, or some vanilla if you’re using nuts, like almonds or pecans.

You can also meal prep. Check out my video on how to make smoothie cubes so you always have a healthy smoothie on hand.

Crock Pot Hot Toddy Mocktail Main

Crock Pot Hot Toddy Mocktail

In this cooking video, I show you how to make a delicious booze-free hot toddy cocktail in a crock pot. Easy and simple, this recipe warms the bones as much as it warms up your home.

Ingredients

6 cups water
1 orange, sliced
¼ teaspoon whole cloves
1 teaspoon allspice berries
1 cinnamon stick
1 lemon slice
2 tablespoons tablespoons honey

Directions

Add 6 cups of water, 12 tea bags, the orange cut into slices, ¼ teaspoon of whole cloves, 1 teaspoon of allspice berries, and 1 cinnamon stick to a crock pot.

Whole cloves, allspice berries, and whole cinnamon sticks will last longer than their ground counterparts. The ground spices, stored in an airtight container in a dark cool place, will only keep for about 3 months, 6 if you are lucky. Whole spices can last up to a year or longer. If you keep them in the refrigerator, even longer than that.

The best way to store oranges and lemons, by the way, is not on your counter. Store citrus fruit in the fridge in the vegetable drawer if you can. Don’t keep them in plastic bags or anything airtight. Stored this way, they will last for weeks. Let the fruit come to room temperature before consuming for the best flavor.

Steep the ingredients in the crock pot, covered, for 1 hour at medium-high heat.

Add in the lemon slice and 2 tablespoons of honey. More if you like it sweeter.

Honey lasts indefinitely. It’s normal for it to crystalize over time. It isn’t spoiled. Storing it anywhere colder than room temperature speeds that up.

Enjoy!

Spicy Pineapple Aperol Spritzer Main

Spicy Pineapple Aperol Spritzer with Valerie Bertinelli

Join me for a fun, candid interview with actress and Food Network star Valerie Bertinelli plus a delicious pineapple and Aperol spritzer cocktail recipe inspired by the chat. We talk about food, recipe development, Trump, battle of the network stars, and so much more!

Ingredients

2 slices of jalapeño
5 sprigs of fresh cilantro
¼ teaspoon sugar
5 dashes of orange bitters
2 ounces pineapple juice
2 ounces Aperol
2 ounces Añejo tequila
Crushed ice

Directions

Add the jalapeno slices, fresh cilantro, sugar, orange bitters, and a splash of pineapple juice to a 16 ounce mason jar.

You probably won’t use up all the cilantro you purchased for this recipe, so here is how to easily store it. This will keep it fresh for weeks. Make sure the herb is completely dry. Then roll it up in a paper towel and store it in a plastic bag with all of the air removed. You can see the full instructions on storing cilantro here: How to store Cilantro for Weeks

Muddle the fresh cilantro and jalapeno by pressing down on it with a muddler and giving it a few turns. You don’t want to over work the herb.

Also, if you purchased jalapenos just for this recipe, check out my Quick Pickle recipe as an easy way to use the rest of them up.

Now fill the jar up with crushed ice. BTW, this recipe is easily scalable. This is just for one cocktail.

Add the pineapple juice, Añejo tequila, and Aperol. You can really use any tequila you have on hand. Because Añejo is oaked, it is sweeter and a bit more rounded than tequila blanco. I find those notes work really well with the cilantro, jalapeno, and pineapple. The vanilla from the oaking gives the drink a nice tropical spin.

Mix the drink and then serve. You can garnish it with leaves from a pineapple crown like I did or just fresh pineapple.

Enjoy!

½ fresh lime, juiced
2 ounces Añejo tequila
1 blood orange slice
1 small sprig of rosemary

Let steep for about 3 minutes, longer if you want a more intense flavor, up to 10 minutes. Strain out the rosemary and cinnamon, reserving the liquid. It should make ¾ cup of syrup.

Transfer it to an airtight container. The syrup keeps in the fridge for about 2 weeks. This syrup is great for teas, homemade sodas, and cocktails.

Mango Lassi Smoothie with Greek Yogurt Main

Mango Lassi Smoothie with Greek Yogurt

Do you always order a mango lassi when you go out for Indian food? Me too! Here is a great way to have that delicious drink for breakfast or any time of day. This healthy smoothie is packed with Greek yogurt.

Ingredients

2 cups mango chunks
1 cup Greek Yogurt
1 tablespoon sugar
Pinch of ground cardamom
Pinch of coarse salt
1 tablespoon chopped pistachio
¼ teaspoon cardamom seeds

Directions

Add the Greek yogurt first then the mango. See here on how to cut a mango. Then the sugar, cardamom, and salt.

If you wish to use frozen mango, let it thaw out slightly. This smoothie doesn’t have any added liquid so the frozen mango won’t blend well.

Blend until smooth.

Divide smoothie between three glasses, top with chopped pistachios and cardamom seeds.

Enjoy!
