Add the 2 ½ cups frozen pineapple chunks, ⅓ cup white rum, and ⅓ cup coconut milk to a blender and blend until smooth.
Fill 2 pint glasses ⅓ full with the blended Piña Colada and place them in the freezer. Place the remaining Piña Colada in a separate container in the freezer.
Add 2 cups of frozen strawberries, ⅓ cup white rum, and ⅓ cup coconut milk to a blender and blend until smooth.
Divide the strawberry mixture between the two pint glasses and place them back in the freezer.
Add 2 tablespoons of Blue Curacao to the leftover Piña Colada and mix well.
Remove the pint glasses from the freezer and divide the blue mixture between them. For extra credit, you can make star ice cubes out of coconut milk the night before for the star-spangled undies.
