Fig & Onion Quick Jam
Ingredients
1 1/2 onions, peeled and chopped
1 tablespoon olive oil
1 tablespoon butter, unsalted
2 cups chopped figs
1/4 cup honey
1/2 cup sugar
1 tablespoon balsamic vinegar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon sea salt
1/4 teaspoon cracked black pepper

Melt 1 tablespoon unsalted butter in a pan.
 Add in 1 tablespoon olive oil and mix it together.
 Add in 1 1/2 peeled and chopped onions.
 Cook down the onions until they are fully caramelized.
 
Add in 2 cups chopped figs, 1/2 cup honey, 1/2 cup sugar, and 1/2 teaspoon pumpkin pie spice. Mix all of it together.
 
 
Cook until the ingredients begin to cook down and simmer.
 Add in 1/4 teaspoon sea salt and 1/4 teaspoon cracked black pepper. Cook entire mixture for about 30 minutes.
 Once it's done cooking down, work in 1 tablespoon balsamic vinegar and then turn off the heat.
 
Once it has cooled, give it a taste as it might need more vinegar. If so, then add in a little bit more vinegar.
 There you go...a delicious fig and onion jam.
