Easy Green Papaya Salad with Watermelon Rind (Thai Som Tum)

How to make Thai green papaya salad using watermelon rind. This is an easy and simple food waste recipe based on Thai Som Tum (also called Som Tam).

Easy Green Papaya Salad Dressing

  • 5 tablespoons lime juice (1ยฝ limes)
  • 3 garlic cloves , minced
  • 2 tablespoons brown sugar
  • 1 teaspoon miso paste
  • 2 tablespoons soy sauce
  • 1 teaspoon chile crisp

Thai Watermelon Rind Salad

  • 4 cups shredded watermelon rind
  • ยฝ cup Easy Green Papaya Salad Dressing
  • 16 ounces green beans , cooked & chilled
  • 8 ounces grape tomatoes , sliced
  • ยผ cup chopped cilantro
  • ยผ cup chopped peanuts

Instructions

Easy Green Papaya Salad Dressing

  • Add 5 tablespoons lime juice (this is about 1ยฝย limes juiced), 3 cloves of minced garlic, 2 tablespoons brown sugar (light or dark), 1 teaspoon miso paste, 2 tablespoons soy sauce, and 1 teaspoon of chile crisp to a large mixing bowl.
  • Mix until fully combined and set aside.
  • Makes over 1/2 cup of dressing.

Thai Watermelon Rind Salad

  • You can shred the watermelon rind with a cheese grater but if you use a food processor, I suggest facing the heartier green part of the rind towards the middle of the blade, where there is more support. It will shred easier.
  • Add 4 cups of shredded watermelon rind and 1/2 cup Easy Green Papaya Salad Dressing to a large mixing bowl, and mix together.
  • Cover and place in the refrigerator for 30 minutes to marinate.
  • Remove from the refrigerator and mix in 16 ounces of green beans and 8 ounces of sliced grape tomatoes.
  • Divide salad and top off with 1/4 cup chopped cilantro and 1/4 chopped peanuts.
  • Enjoy!

How to Pick Watermelon

Choose watermelons that feel heavy for their size and have a nice even shape. Look for melons that have a yellowish spot amongst the green rind.

How to Soften Brown Sugar

Add brown sugar to a microwave safe bowl and cover with a damp towel. Nuke 10 seconds at a time, stirring in between. Careful not to burn or melt the sugar.
