Thai Watermelon Rind Salad
You can shred the watermelon rind with a cheese grater but if you use a food processor, I suggest facing the heartier green part of the rind towards the middle of the blade, where there is more support. It will shred easier.
Add 4 cups of shredded watermelon rind and 1/2 cup Easy Green Papaya Salad Dressing to a large mixing bowl, and mix together.
Cover and place in the refrigerator for 30 minutes to marinate.
Remove from the refrigerator and mix in 16 ounces of green beans and 8 ounces of sliced grape tomatoes.
Divide salad and top off with 1/4 cup chopped cilantro and 1/4 chopped peanuts.
