Cilantro Lime Rice with Avocado Oil

Burritos, summer side dish, or just because you want to eat your feelings, this cilantro lime rice dish is amazing. Avocado oil gives a freshness that is unmatched.

Ingredients

1 cup basmati rice
1/2 lime, juiced
6 cups vegetable broth
1/3 cup chopped cilantro
2 tablespoons avocado oil

  1. Bring the vegetable broth to a boil. Add the basmati rice and cook until tender; about 10 minutes. Make sure you are using my hack for perfect rice [link to video]  

     
  2. In a large mixing bowl, add the cooked rice, lime juice, cilantro, and avocado oil. Toss until fully mixed.  

     
  3. Enjoy!
