Ingredients
Spicy Grapefruit & Wine Marinade
- ยผ cup red grapefruit juice
- ยผ cup white wine vinegar
- 2 tablespoons olive oil
- ยผ teaspoon sea salt
- โ teaspoon freshly ground black pepper
- ยผ teaspoon crushed red pepper flakes
Melon, Halloumi & Brussel Skewers
- 4 cups watermelon, 1-inch cubes
- 4 cups honeydew, 1-inch cubes
- 2 cups cantaloupe, 1-inch cubes
- 1 cup jicama, 1-inch cubes
- 2 roma tomatoes, quartered
- 8 ounces Halloumi, 1-inch cubes
- ยฝ cup basil leaves
- ยฝ cup Brussels sprout leaves
Instructions
- Whisk together ยผ cup grapefruit juice, ยผ vinegar, 2 tablespoons oil, ยผ teaspoon sea salt, โ teaspoon pepper, and ยผ teaspoon pepper flakes.
- Set aside.
- Add 1-inch cubes of the following โ 4 cups watermelon, 4 cups honeydew, 2 cups cantaloupe, and 1 cup jicama โ to a container with the Spicy Grapefruit & Wine Marinade. Refrigerate for at least 1 hour, stirring once or twice.
- Assemble the skewers with the melons and jicama, and cubes of 2 tomatoes, 8 ounces of Halloumi cheese, and the fresh leaves from ยฝ cup basil, and ยฝ cup Brussels sprouts, alternating between the ingredients.
- Use the grill of your choice โ I used my indoor Le Creuset โ which I LOVE. I brushed it with some olive oil before warming the pan.
- Grill the skewers on one side for about 5 minutes. Flip them over and grill for another 5 minutes. So you are just grilling 2 sides.
- You may have to adjust grilling time to get a good sear. I suggested experimenting with 1 skewer to start.
- Enjoy with a canned SIP certified wine!

How to Store Olive Oil
Keep olive oil at room temperature away from light and heat. Stored this way, it will keep for up to 2 years.
How to Store Basil
Keep fresh basil in a jar stored like cut flowers. First trim the end and then cover jar with a bag. Keep in a shaded part of the kitchen at room temperature. This works for many herbs but others should be refrigerated.

Boost Basil Flavor
When adding basil to hot dishes, like marinara, add it at the end. When adding to fresh dishes, place it in one hand and spank it with the other.
Choosing a Watermelon
Pick watermelons that are uniform in size. A creamy yellowish spot on the skin indicates it was picked at the right time and the skin should have a dull finish.
