Wild rice is the edible seed of aquatic grasses native to North America. It is a grain, like wheat, barley, or corn. So while wild rice is not technically rice, it is related. Think of it as riceโs cousin. Both wild rice and true rice belong to the grass family.
Both rice and wild rice grow in shallow water, which is why they look and cook so similarly, even though they are not the same plant. That is why wild rice is often called a rice analog.
Why You Must Rinse Wild Rice
You should always rinse wild rice before cooking it. It can be coated in dust, ash, or leftover starch from harvesting and drying. And no โ those arenโt seasonings! ๐
How to Soak Wild Rice & Cut Cook Time
Soaking wild rice before you cook it can cut the cook time by about half. Future you says thanks!
Cover the wild rice with about 2 inches of liquid. No need to rinse it first. Cover the dish and park it in the fridge (because bacteria = bad). Soak it overnight โ and only overnight. Itโs rice (kinda), not kombucha. Then drain and rinse the rice before cooking.
Soaking also reduces how much liquid youโll need later. It takes the cooking ratio from 1 cup rice + 4 cups liquid down to 1 cup rice + 3 cups liquid when cooking it uncovered on the stovetop.
B-T-dubs, 1 cup dry wild rice makes about 3 to 4 cups cooked.
How to Cook Wild Rice on the Stovetop
When it comes to stovetop wild rice, youโve got choices. Are you team Seal n Simmer or team Free the Steam?
If youโre new to cooking wild rice, start with the no-lid approach. Cooking it uncovered makes it easier to prevent boil overs and keeps you in control of the simmer: go full Janet Jackson.

To cook wild rice uncovered, add 1 cup wild rice and 4 cups liquid to a pot. If you want a little insurance against sticking, add a teaspoon of oil or a small pat of butter.
Bring it to a boil, then immediately reduce the heat to a low simmer. That low simmer is the key. Stovetop wild rice comes with a high scorch risk, so keep the heat gentle and give it a stir now and then.
Cook for about 45 minutes, stirring occasionally.
If the liquid cooks off before the rice is done, add 1/4 cup of hot liquid and keep cooking.
Once itโs done, drain off any extra liquid. Return the pot to the stove, fluff the rice, and let it rest for about 5 minutes. Fluff again before serving.

If you prefer cooking with a lid, you can use less liquid. Add 1 cup wild rice and 3 cups liquid to the pot, then cover.
The trapped steam does the work, but check it a few times at the beginning. That extra steam can push a simmer into a boil if the heat is too high.

How to Cook Wild Rice in a Dutch Oven
This one uses a pot like a Dutch oven. No, not that kind. The Dutch oven method is very set it and forget it, which makes it another great beginner option.
Heat the oven to 375 degrees. Thatโs Fahrenheit.
In a Dutch oven, or any stovetop and oven-safe pot with a tight-fitting lid, add 1 cup wild rice and 3 cups very hot liquid. If you want a little help preventing sticking, add a teaspoon of oil or a bit of butter.
Cover and bake for 60 minutes.
After 60 minutes, stir the rice. If it looks dry or the rice still seems too firm, add more hot liquid. Cover again and bake for another 30 minutes, but check it at about 15 minutes.
When I add more liquid, I typically add no more than a quarter cup at a time, then see how it goes.
When the rice is done, remove the pot and take off the lid carefully. Itโs hot. Fluff the rice, let it rest for 5 minutes, then fluff again before serving.
Why Dutch Oven Wild Rice
The Dutch oven method bakes up plump kernels that are perfect for casseroles or risotto-adjacent bakes.
How to Cook Wild Rice on a Sheet PaN
For the sheet pan hack, use a pan size where the rice is covered by about a 1/2-inch of very hot liquid. This method is simple and surprisingly effective, as long as you keep the steam trapped.
Youโll need 1 cup wild rice and 3 cups very hot liquid. Add them onto the sheet pan, making sure the rice is evenly spread and submerged.
Add a teaspoon of oil or a bit of butter to help prevent sticking.
Cover and seal the pan tightly with foil, crimping the edges so steam cannot escape. That trapped steam is the whole game here.
Bake at 375 degrees F for 1 hour.
After an hour, carefully open the foil, stir the rice, and add more hot liquid if needed. Cover again and bake for another 30 minutes, but check it at about 15 minutes to make sure it is not drying out.

How to Cook Wild Rice in an Instant Pot
For those of you with a small appliance fetish, the next few methods are for you.
Add 1 cup wild rice and 1ยฝ cups liquid to the Instant Pot. I recommend adding 1 teaspoon of oil for this method to help prevent sticking. Close and secure the lid, then set the steam release knob to Sealing.
Cook on High Pressure for 20 minutes, followed by 10 minutes of natural release.
When cooking stops and the pot switches to Keep Warm, leave the steam release knob at Sealing and let it sit for those 10 minutes so the pressure drops on its own.
After that, turn the knob to Venting for a quick release, then carefully open the lid.
Fluff the rice and let it rest for 5 minutes, then fluff again and serve.

The Instant Pot makes wild rice soft and plump, which is perfect for soups and stews, or cooking a batch for freezer prep.
How to Cook Wild Rice in a Rice CookER
Add 1 cup wild rice and 2 cups hot liquid to the rice cooker. Coating the pot with 1 teaspoon of oil or a bit of butter really helps prevent sticking.
Press Cook. It usually takes about an hour, but check it at around 45 minutes.
If the rice is still too firm or looks dry, add a quarter cup of hot liquid and keep cooking until itโs done.

For a slow cooker, like a crock pot, add 1 cup wild rice and 2 1/2 cups liquid to the insert. If youโre worried about sticking, add 1 teaspoon of oil or a bit of butter.
Cook on Low for 6 hours, checking on it occasionally after the 4 hour mark.
If it needs more liquid, add a quarter cup of hot liquid, stir, and cook for another 30 minutes.

How to Cook Perfect Wild Rice
If you want the most foolproof way to cook wild rice, this is it, the pasta method. No ratio anxiety. You have to try really hard to mess it up. I first did this method over 7 years ago for barley, and itโs still one of my favorite tricks for tougher grains.
Bring 6 cups of liquid to a boil, then add 1 cup wild rice.
Reduce to a steady simmer and cook uncovered for about 45 minutes.
When most of the grains have split and curled back, drain off the liquid. Return the pot to the stovetop, fluff the rice, and let it rest for 5 minutes or so.
Fluff again, then serve.

You can also use this same approach on other grains and rice, including barley, farro, quinoa, and brown rice.

What exactly is behind the split-and-curl of perfectly cooked wild rice? Hereโs the science.
Cooking wild rice is basically water absorption + starch gelatinization. As it simmers in liquid, water penetrates the grain and softens its structure. With enough heat and moisture, the starches absorb liquid, swell, and create that โblossomingโ effect โ the split and curl. Thatโs when the tough outer bran layer breaks open and curls back, revealing the cream-colored endosperm inside.
Overcooking triggers the same process too far: those starches keep breaking down, and the texture turns mushy.
