Gruyere & Caramelized Apple Waffle Sandwich

I am still on my keeping it simple kick. Just like my "tomato bun" burger and my apple sandwich, this Gruyere & Caramelized Apple Waffle Sandwich is pretty simple. Using my sweet potato waffles, I made a "grilled cheese" sandwich you will LOVE. I did!

Ingredients

  • 1 sweet potato waffle
  • 4 oz Gruyère, shredded
  • 1 Granny Smith apple, halved and sliced
  • 1 tbsp butter
  • 1 tbsp brown sugar

Instructions

  • In a small frying pan, warm 1 tablespoon of butter. When melted, add 1 tablespoon of brown sugar and combine. Add in the sliced apples and cook over a medium heat until the apples are just tender. This should take about two minutes.

  • Cut a single sweet potato waffle into quarters and divide the caramelized apples and shredded Gruyere between two of the pieces. In order to prevent the whole thing from falling over when you bake it, stack the ingredients in a pyramid shape.

  • Place the stacks on a parchment-lined baking sheet and bake in a preheated oven at 350 degrees F for about 5 minutes, until the cheese is gooey and melted.
  • Remove from the oven and top with the other waffle pieces. Give em a good squish to flatten out and enjoy!
