Fig & Onion Quick Jam

Jam on it! No, really.. if you are a jam lover, this is the fall recipe for you. In this video I show you how to make a delicious onion and fig quick jam, or refrigerator jam. That means no canning skills are needed! It's a great holiday condiment or perfect right out of the jar (not gonna lie!).

Total Time 1 hour 40 minutes

Ingredients

  • 1 1/2 onions, peeled and chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter, unsalted
  • 2 cups chopped figs
  • 1/4 cup honey
  • 1/2 cup sugar
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper

Instructions

  • Melt 1 tablespoon unsalted butter in a pan.
  • Add in 1 tablespoon olive oil and mix it together.
  • Add in 1 1/2 peeled and chopped onions.
  • Cook down the onions until they are fully caramelized.

  • Add in 2 cups chopped figs, 1/2 cup honey, 1/2 cup sugar, and 1/2 teaspoon pumpkin pie spice. Mix all of it together.

  • Cook until the ingredients begin to cook down and simmer.
  • Add in 1/4 teaspoon sea salt and 1/4 teaspoon cracked black pepper. Cook entire mixture for about 30 minutes.
  • Once it's done cooking down, work in 1 tablespoon balsamic vinegar and then turn off the heat.
  • Once it has cooled, give it a taste as it might need more vinegar. If so, then add in a little bit more vinegar.
  • There you go...a delicious fig and onion jam.
