Honestly, this Chard is easy drinking on it’s own; then again, most alcohol is for me. Tolosa suggests a pairing of shellfish. Personally, I’d go with a cream sauce as the citrus in the wine will cut through the fat.
At $26.00 per bottle it’s a touch more than what I’d normally spend on a Chard but this little vixen is an exception to the rule. Tolosa is located in the Edna Valley AVA which is known for both Chards and Pinot Noirs. I’m a slave to to these two varietals and this winery in particular, stands out. By the way, AVA stands for American Viticultural Area.
You want to talk sustainability? These folks kick ass. All of their vineyards are SIP Certified and “all winery waste, including grape seeds and skins is recycled, composted, or otherwise recovered.” I’ve toured Tolosa and they are the real deal. If you get the chance to tour a sustainable facility like this one, don’t pass it up.
