The 2011 Castoro Cellars Cabernet Sauvignon spent time in both American and French oak, and it shows. The wine smells like a log cabin with hints of ripe fruit. Ripe berries fill my mouth with just one sip, but the wine isn’t overly jammy. It’s rather balanced. And all that wood (yes, I said wood) gives it a slight vanilla flavor with toasty undertones.

As I’m really loving this wine, I was shocked by its $16 price tag. Are you kidding? Load up my truck! That’s a great value for a flavorful, balanced Paso Cab. In fact, every Castoro wine is well priced. Castoro wants in your mouth. Does that sound dirty? I’m loving that it’s hovering at 13.5% alcohol as well. Cabs tend to be high in alcohol and I’m not trying to get drunk off one glass, but I’m not opposed to it either.

Paso Robles is Cab country and I think Castoro delivers one hell of a wine. The grapes from this Cab come from their estate vineyard which is SIP Certified and Certified Organic. So for $16 a bottle, you’re getting a great product but one that is made in an earth-friendly manner. From vineyard to tasting room, the folks at Castoro are making every effort they can to leave this planet as they found it.

A big thank you to them for their sustainable work and this delicious juice. Oh, and no animal products are used in this wine’s production so it is vegan too (which is rare for wines). Cheers!
