No-Bake Peanut Butter Energy Bites

Eating healthy was never easier (or tastier) than with these No-Bake Energy Bites. Made with peanut butter, flax seed, and dried cherries, they are the perfect snack for in between meal or for the hiking trail. And yes, no baking required!

INGREDIENTS

  • 1 cup Bob's Red Mill Old Fashioned Rolled Oats
  • 1 cup chopped dried cherries (4 ounces)
  • ½ cup crushed pistachios
  • ⅓ cup mini chocolate chips
  • ⅓ cup flax seed
  • ¼ cup creamy peanut butter
  • ⅓ cup honey

Add the oats, cherries, flax seed, pistachios, and mini chocolate chips to a large mixing bowl. I will say, this recipe is very easy to personalize. You can use your favorite fruit or nuts, replace the chocolate chips with yogurt chips, or leave them out if you want a vegan version.

Mix to combine. If you want to make a gluten-free version, check out Bob’s other oat options. Lots to choose from!

Add in the honey and peanut butter, mix until all ingredients are coated.

Place bowl in the fridge for at an hour. This will make the mixture a little easier to work with.

Spray hands with cooking spray. This will prevent the mixture from mostly sticking to you.

Roll the mixture into 1-inch balls.

Place the energy bites into an airtight container and store in the fridge for up to a week, or freeze for up to a month. These are great after school snacks, perfect for hiking but if you want a healthy dessert, you could also dip half of them in melted chocolate.
